We’ve been feeling a wee bit delicate today, so to try and perk us up I made us some prawns on toast. They were absolutely delicious and just what we needed to cure our monster of a hangover.
I highly recommend this dish as a tasty starter or nibble between two. All you need to do is slice some ciabatta and lightly toast. Melt a dollop of butter in a pan with a good glug of olive oil. Add a sliced clove of garlic, a small piece of ginger cut into matchsticks and a sliced red Chilli. Leave for a minute or two, then add some raw prawns. When they are pink, add the juice of a lemon, a good drizzle of extra virgin olive oil and some chopped parsley. You should now have a nice juicy sauce.
Pour the prawns over the toasted ciabatta and there you go. Easy and delicious. Yum!
